Bro, this game is really awesome. I had so much fun playing SkillWarz. But ı have a question. Man, why you not put this game on Steam? So you can reach more audience. Just a litte advice :)

Apple Mouse is not made for gaming. If you want to play shooter games, then buy some cheap mouse (for example Logitech B100 for 5$) and stop torture yourself.
In settings you can change inputs. You can use any key on your keyboard to aim, or fire.
Fix what? Around 30% of our player base are players on Mac and i very rarely hear that game is crashing on Mac. Check permissions. If game can't access hard drive to create game folders, or can't access server, then it will close. Closing is not crash.
What error do you see? Do you play via Itch.io app, or you downloaded game manually?
If you play on integrated graphics then such things can happen. All i can suggest you, buy any dedicated graphics card released in last 5 years (even cheapest, or used).

The settings keep resetting to 40Hz display for some reason. My display is set to 60Hz in my graphics driver settings. Also, I've got the game on both linux (xubuntu) and windows 10 on the same machine (dual boot) and the issue only appears on the windows build. Any ideas why?
Game for Mac, Linux and Windows is built from the same source. If something works on one platform and doesn't on other, than problem is somewhere between unity engine and OS. What resolution and Fullscreen mode are you trying to use? Default resolution?

I don't think your refresh rate is actually @40. Turn on "Show frame-rate" and vSync. Then switch Fullscreen modes and you will see refresh rate in your frame rate. Frame rate can show up slightly higher then refresh rate, but you will see if it's around 40, or 60.

Game now runs on latest version of Unity engine.
In docs i see that min requirement is macOS 10.12+

No. Technology moves forward and support for older versions of OS is dropped at some point.
I mean Before the Update it was requires macOS 10.11+
now it requires macOS 10.12+

If you are new to gaming, then install itch.io app and then games via app.

Sup, the game is crashing every time I try to open it at the unity logo. I got a late 2013 macbook pro running high sierra 10.13.6
You downloaded game manually, or via itch.io app? And what error message do you see when game closes?

Yeah, Vsync does confirm it's running at 60. It's just the settings menu showing the wrong configuration. Thanks for the response :)
